We operate an Italian-made olive mill that processes olives within three hours of harvest, ensuring maximum freshness, flavor, and health benefits. Our operation is powered by a large solar array and energy storage system, making us a net electricity generator with a minimal carbon footprint. We grow and mill olives onsite, maintaining native habitat areas and practicing cold processing to preserve high polyphenol levels. Our oils are certified organic by the CCOF and tested for high polyphenol content, supporting heart health and overall wellness.
