Sfoglini is a Brooklyn, New York–based producer of artisanal organic pasta, founded in July 2012 by Chef Steve Gonzalez and creative director Scott Ketchum to bring locally made, restaurant‑quality pasta to New York City. They craft a diverse portfolio of premium pasta, including 16 organic durum semolina and whole‑grain shapes, plus innovative seasonal varieties made with ingredients sourced from local farms and green markets. Sfoglini employs traditional Italian bronze‑die extrusion and slow‑drying over more than nine hours to deliver pasta that clings to sauce, preserves flavor, and retains nutrients. Their pasta is certified organic and non‑GMO, and their facility is OK Kosher certified.
